Tailored for jams and marmalades, this product guarantees a robust gel strength, exceptional flavour release, and a gradual setting process.     How to use: Specially developed for jams and marmalades, it will provide a high gel strength, excellent flavour release and a slow setting.

    Typical Dosage:
    Jams and Marmalades: Use 0.3% to 0.8% pectin (3 to 8 grams per 1 kg).

    Pectin Jellies: Use 1.4% to 1.8% pectin (14 to 18 grams per 1 kg).

    The recommended dosage is calculated based on the combined weight of fruit and sugar.

    The optimal pectin dosage is influenced by the specific application and the existing natural pectin levels in the fruit. Higher pectin levels in the fruit require less additional pectin; and lower pectin levels in fruit require more pectin to be added.

    When introducing pectin to your recipe, ideally blend it with a small portion of the sugar before incorporating it into your fruit/solution; this aids in dispersing the pectin. Gradually add the pectin while stirring continuously. Once the pectin is fully dissolved, bring the solution to a rolling boil for 1 minute. Allow it to cool at room temperature before transferring it to the refrigerator to set. Setting times may vary depending on the type of fruit used. For a firmer set, you can re-boil the solution and add more pectin. It's important to note that if the acid content of the fruit or solution is low, an acid substitute like lemon juice or citric acid can be used to increase the acidity of the fruit mixture, enhancing the setting level of the pectin.



    Storage Conditions: Store in dry, cool conditions and not in direct sunlight. Use within 6 months of opening.
