Pumpkin powder is rich, concentrated and easy to cook with. This quick recipe shows you how to turn it into a smooth, delicious pumpkin soup in minutes.
Ingredients
- ½ cup Deluxe Nutrition Pumpkin Powder
- 2 cups warm water (for rehydration)
- 1 tbsp olive oil or butter
- 1 small onion, chopped
- 2–3 cloves garlic, minced
- 1 tbsp fresh ginger (or 1 tsp ground)
- 1–2 tbsp curry powder
- 1 tsp ground cumin
- ½ tsp turmeric
- ½ tsp paprika (optional)
- 2–3 cups vegetable or chicken broth
- 1 cup coconut milk
- Salt & pepper to taste
Key Trick for Pumpkin Powder
The smoothest results come from making a paste first. Mix equal parts pumpkin powder and warm water (½ cup powder + ½ cup water) to form a thick paste. Then add more liquid gradually while cooking. This prevents graininess and gives a silky soup.
Method
- Sauté the onion, garlic and ginger in oil or butter until soft.
- Add curry powder, cumin, turmeric and paprika. Toast for 30 seconds.
- Stir in the pumpkin paste.
- Add broth gradually while stirring. Simmer 10–15 minutes.
- Pour in coconut milk.
- Blend for extra smoothness (optional).
- Adjust thickness with broth or extra simmering.
Taste Adjustments
- Pumpkin powder has a naturally sweet, nutty flavour.
- Add a pinch of salt early to balance it.
- A squeeze of lime at the end brightens the flavour.
- If too thick → add broth.
- If too thin → simmer longer (powder thickens over time).
Pro Tip
Pumpkin powder is more concentrated than purée. Start with less — you can always add more. Flavour develops after simmering, so don’t judge too early.
